Kontaminanty v potravinovom reťazci

Pracovná skupina pre kontaminanty v potravinovom reťazci (CONTAM) poskytuje vedecké poradenstvo o kontaminantoch v potravinovom reťazci a nežiaducich látkach, ako sú prírodné toxické látky, mykotoxíny a rezíduá nepovolených látok.

Členovia pracovnej skupiny CONTAM sú vedci z celej Európy, ktorí majú odborné znalosti v týchto oblastiach:

  • Chémia – organická, anorganická, analytická chémia, spracovanie potravín a krmív v oblasti chemických kontaminantov
  • Vyhodnotenie miery vystavenia riziku – vyžadujú sa odborné znalosti, najmä v súvislosti s vyhodnotením miery vystavenia riziku chemickým kontaminantom v strave vrátane znalostí o prieskumoch spotreby potravín
  • Humánna a veterinárna toxikológia (pri posudzovaní rizík chemikálií) – absorpcia, distribúcia, metabolizmus, vylučovanie látok (ADME) (toxikokinetika a toxikodynamika), subchronická a chronická toxicita (štúdie po opakovanom podaní), genotoxicita a mutagenita, vývojová a reprodukčná toxicita, karcinogenita, alergénnosť a imunotoxicita
  • Toxikologické testy na pokusných zvieratách – interpretácia toxických účinkov chemických kontaminantov na hospodárske a domáce zvieratá
  • Epidemiológia – biomarkery účinkov a expozície a interpretácia údajov o ľuďoch
  • Štatistika – hodnotenie účinkov v závislosti od dávky, napr. modelovanie porovnávacej dávky a analýza komplexných (epidemiologických) súborov údajov
  • Výživa zvierat – vyhodnotenie miery vystavenia zvierat riziku
