A transformation product is a substance formed when an original chemical changes after use or release into the environment. In food safety, this occurs when pesticides, veterinary medicines, or contaminants break down through processes such as metabolism in plants or animals, food processing, sunlight, water, or microorganisms. These products can be less harmful, equally toxic, or more toxic than the original substance.
EFSA considers transformation products when assessing food safety risks, evaluating their presence in food, consumer exposure, and potential health or environmental impacts. It often requires data on transformation products in plants, animals, food processing, and the environment, and may assess them separately from the original chemical to ensure safety assessments cover both the parent compound and any relevant products formed.
