Context:

In food safety, an expressed protein refers to a protein that is actively produced by a gene, often in the context of genetically modified organisms (GMOs) or other engineered foods. For example, in a GMO crop, a new gene might be added to produce a specific protein that helps the plant resist pests.

EFSA examines these expressed proteins to assess whether they could cause allergic reactions, toxicity, or other health risks when consumed. By studying how much of the protein is present in the food and its characteristics, EFSA can determine whether the food is safe for people to eat.
