Extensive literature search on nitrosocompounds in food

  • Background: Nitrosocompounds (NOCs) are chemical compounds bearing a nitroso group (–N=O) attached to a nitrogen atom (N–N=O). The NOCs can be divided into two classes: N-nitrosamines and N-nitrosamides and related compounds. N-Nitrosamines are N-nitroso derivatives of secondary amines containing dialkyl, alkylaryl and diaryl substituents (Figure 1A); N-nitrosamides and its related compounds are N-nitroso derivatives of ureas, amides, carbamates, guanidines, and similar compounds (Figure 1B).

    Food may contain preformed NOCs mainly as a result of food processing (Deitrich et al, 2005). EFSA seeks to receive a comprehensive collection and overview of the publicly available information on these compounds and an evaluation of this information with regard to its relevance for the assessment of risks of NOCs to human health due to food consumption. 
  • Objectives: The objectives of the contract resulting from this procurement procedure are as follows:
    Objective 1: To develop search strategies to retrieve information pertinent to the human health risk assessment of NOCs in food.
    Objective 2: To carry out the extensive literature search.
    Objective 3: To evaluate the literature with regard to their relevance for human health risk assessment of NOCs in food.
